Lemons can be collected from Lemon Fruit Leaves by right-clicking it, yielding 1 lemon when it is fruiting. After dropping the lemon on the ground, the fruit leave reverts to its flowering stage.

Block Loot

Lemon Fruit Leaves drop 1 lemon upon decay or when broken using a tool without Silk Touch, regardless of stage.
